Step 1: Cucumber salad production
General Information
Every morning, Ökodorf Brodowin receives the orders of their customers and according to the orders the production of fresh products like the cucumber salad is planned. Before the production can start the workstation is prepared. For the production Ökodorf Brodowin uses cucumbers from their own agriculture as long as they are available.
When there are no more of their own cucumbers in stock, they buy other cucumbers from local farmers in the region, later also from other parts of Germany depending on availability with the following priority:
Regional (+Bio) -> Demeter → Bioland → EU-Bio

Material input: Cucumber, dill, electricity (machines and facilities), label, pepper, sugar, vinegar

Waste: Cucumber skin



First the cucumbers are peeled and then grated into a stainless steel bowl. Then salt is added so that the liquid is reduced.


After adding salt, the other herbs (dill, ground pepper, sugar) and vinegar are added. All ingredients are mixed and the salad is tasted. If needed, more herbs or vinegar are added.




Now the cucumber salad is filled into the glass jars and closed with the vacuum machine.


The labels are stamped with the date of consumption and attached to the jars.
Step 2: Storage & transport
General Information
The vacuumed cucumber salad is transported to the “white area” where it is stored until it is picked and packed for the end customer.
